YOU ARE NOT FORGOTTEN


The other day I found myself watching old episodes of the Brady Bunch and it brought back memories.  I remember watching this show growing up.  The timeless reruns were always showing on some classic television channel, and the life lessons were always relevant.   One of the most memorable episodes was where Jan, the middle daughter, felt like she was always in the shadow of her older sister, Marcia.  Everything was about Marcia.  Marcia, Marcia, Marcia!  I couldn't relate to that situation back then, being the youngest child in my family.  I just thought Jan was an overly dramatic girl that always wanted attention.  Isn't it funny that as an adult, that episode took on an entirely different meaning? 
Whether you have had the pleasure of being the middle child or the only child, the feeling of being unnoticed or forgotten has come over all of us at some point in our lives.  It doesn't have to be in a family situation.  It can be in your career, education, even in your relationships.  There are times in our lives where no matter what we do, we are overlooked. Can you identify with any of these people?
  • James worked for the same company faithfully for 5 years, the epitome of the perfect employee.  He would come in early and stay late and the time in between would be spent diligently working with a positive attitude and a smile.  Regardless of the obstacles that came his way, James remained positive and continued to meet goals and often times exceed them.  A spot opened up in management and James knew he was a shoe in.  However, upper management offered the position to another employee that had only been with the company less than a year and had less experience than James.   The once positive employee turned resentful and unmotivated.
  • Carla was in her final months of culinary school and maintained a high grade point average.  She worked for different restaurants gaining hands on experience during school and was able to create a large portfolio showcasing her recipes and culinary art.  Every year the dean of the academy wrote letters of recommendation to three of the most deserving students of the graduating class.  It was an honor to receive the recommendation and a significant boost in finding a job in a reputable restaurant after graduation.  The day the names of the recipients were announced, Carla was calm and confident.  When her name wasn't on the list, Carla felt defeated and doubted her abilities as a chef.
  •  Gracie was a faithful single Christian woman that lived to serve.  She would devote her free time to the church doing outreaches and volunteering in any and all areas.  With a strong desire to find true love and be married, Gracie participated in many singles events and even joined the singles ministry at her church.  As time went on Gracie would soon see most of her friends getting engaged and married, even those who didn't walk on the same path with the Lord that she did.  When one of the new believers in the single’s ministry became engaged, Gracie found it hard to be happy for her.  Her dejected heart felt as if she were abandoned and forgotten by her Creator.
 These three individuals felt the same thing that Jan felt being in the shadow of her sister.   The bible has good example of this that often times people miss. In Luke 15, Jesus tells a story about a wealthy man with two sons.  His younger son decides he wants his inheritance right away instead of waiting until after his father dies.  His father grants him his request and he goes off and enjoys inheritance.  We all know how the story ends.  After spending all his money partying and having a good time, the younger son finds himself broke, busted and disgusted and returns home.  Happy to see his rebellious son come home, the wealthy man tells the household staff to plan a party and spare no expense.  His son has returned home.  He gave his son jewelry and clothed him with an expensive robe and shoes.  The celebration was about to begin for his son had come home. 
What most people forget to recall was that the older brother, who had stayed home and worked the family business faithfully, heard about the elaborate party that was underway.  How could his younger brother get all of this and he gets overlooked?  When he confronted his father in verse 29 he says, “Look, these many years I have served you and I never disobeyed your command, yet you never gave me a young goat that I may celebrate with my friends.”  The father looks at his son and responds these few words that carry so much weight:  “Son, you are always with me, and all that is mine is yours.”   All that is mine is yours.  The wealthy father told his son that everything he had was his, so why was he upset? 
            Often times we forget that we are the daughters and sons of the King and that He tells us that all He has is ours.  We look at what is going on around us and what this person has and what that person has and think that He has forgotten about us.  That is simply not true.  Like the older son, we don’t know why the others get what they do, but we have to remember we are who we are.  If you knew that you had access to billions of dollars, would you be upset if someone won a thousand dollars in the lottery?    
            What does that have to do with these situations, you ask?  It all boils down to faith.  If we trust and believe in the blessings, the blessings will come.  Let’s say in the situations of James, Carla and Gracie, they remained positive and full of faith.  How would their situations have ended differently?
  •   James continued being a model employee and met every goal presented to him.  A few months after being passed up for team manager, James was approached for a position as director of training and development.  The position paid more than the team manager position and offered more authority than all of the managers.   He became one of the most respected employees in the company.
  • Carla continued high grades until graduation despite not receiving a recommendation from the dean.  The day after graduation, Carla received a phone call from her boss at the restaurant she worked at as a low level cook.  He offered her a promotion as a chef assistant and a significant raise.   The restaurants that would have required the recommendation letter would never have hired her at such a high position with high pay.  Carla was better off.
  • Gracie continued serving in the church and volunteering her time to different outreaches.  One day at an event, she met a youth pastor from a different church and they instantly hit it off.  Before long, Gracie was engaged to be a pastor's wife.  She didn't meet him in any of the single's clubs or single's events.  She met her husband in the place where God had called her to be, and it couldn't have been more perfect.


 These endings can be your ending; it all depends on your level of faith.   Remember who you are and who your Creator is.  God’s plans for you are perfect.  He hasn't forgotten about you.  Don’t forget about Him.

THE FAST AND THE DELICIOUS


Every January, I join millions of other Christians and enter a period of fasting and prayer.   I like starting the year off with clarity and direction and for me that is always a result of fasting.  One year I did a juice fast for 15 days.  Another year I fasted breakfast and lunch and only ate when the sun went down.  That lasted 21 days.  This year, my plan was to do the Daniel Fast, based on Daniel in the bible.   Daniel ate only fruits and vegetables and drank water for 10 days.  At the end of the fast he had more wisdom and vision and looked better too.  (Daniel 1:12-17).  This is what I wanted to do.  However, in my research for the fast, I came across a plan:  The Daniel Plan, also primarily based on scripture but encourages a healthy way of life.  I was intrigued.


The Daniel Plan is a program designed by Pastor Rick Warren, Dr. Daniel Amen, Dr. Mark Hyman and Dr. Mehmet Oz.  Concentrating on Faith, Food, Fitness, Focus and Friends, this plan guides you in to making better health choices and helps take your relationship with God to another level.  I decided, for 40 days, instead of just doing a Daniel fast, I would follow the Daniel Plan and so far, it has been amazing! 


As with any fast, you want to begin with goals in mind.  What is the purpose?  How long will it last?   Often times in the bible when a group was called to fast and pray, it was to move God in some way to move in our lives.  The same applies with this plan.  The way it has been designed, it encourages you create smart goals and in the process of achieving them, you draw near to God and create healthy habits. 


Every month I share a recipe (because I love to cook!) and it usually corresponds to what is going on in my life.  So for this month’s recipe, I have a fast friendly, crown pleasing appetizer for the big game, compliments of The Daniel Plan.

Super Bowl Sunday Dip

Mark Hyman MD

A remake of the classic seven-layer dip, this is a super dairy- and gluten-free party food. Serve with sliced fresh vegetables. Serving size: ¼ cup

Ingredients:
1 cup vegetarian refried beans
1 medium avocado, chopped (about 3/4 cup)
3 tablespoons minced red onion
2 teaspoons fresh lime juice
1 teaspoon finely chopped oregano
1 teaspoon minced jalapeño pepper
1/4 cup minced cilantro
1/2 teaspoon kosher salt
1/2 cup diced roasted red bell pepper (page 150)
1/2 cup chopped tomatoes

Preparation:
1. Spread the refried beans in a shallow bowl or platter.

2. In a small bowl, stir together the avocado, red onion, lime juice, oregano, jalapeño, 2 tablespoons of the cilantro, and the salt. Spread the mixture on the refried beans.

3. Sprinkle the roasted red pepper over the avocado mixture and top with the tomatoes and remaining cilantro.

MOVING FORWARD

Here we are, a new year before us.  Resolutions are being made and before the month is over, many will be forgotten.  Just before the holiday, I had a routine doctor’s appointment and he enthusiastically asked, “Are you ready for the New Year?  Do you have your list of resolutions made?”  Before I could give it a thought I responded, “Yes.  I’m going to live this year better than last year!”  He got a chuckle out of my response but in reality, it was what was in my heart: to do my best to have a great 2015 and that starts with leaving 2014 behind. 

I, as many people in the world, have had several ups and downs this past year.   This is life.  If I had to make a resolution, it would be not to dwell on those downs from last year and move forward to better things in the new year.   Don’t get me wrong, life does not come without its share of  challenges, but how we respond to those challenges is what makes us either victorious or a sore loser.  I want to be a victor!

The story of Lot and his wife in the Bible always puzzled me.  They lived in a horrible city full sin and they clearly did not belong.  In Genesis 19, God sends his angels to take Lot and his family out of the city and on to a better place before he destroys the city.  In verse 17, when the angel instructs Lot and his family to leave, he says, “Escape for your life.  Do not look back or stop anywhere in the valley.”   In other words, move forward.  Don’t look back at what the year brought you.  Move forward because God has something good for you.   Furthermore, if you find yourself in a season where things haven’t been going so well and you’re in the valley, don’t stop!  Move forward.  Something better is waiting for you ahead.

If you remember the rest of the story, after Lot’s family started to flee out of the city, verse 26 says, “But Lot’s wife, behind him, looked back, and she became a pillar of salt.”  Why is it that, even though a situation is bad for us and we know that we can do better, because we are so used to it, we can’t help but look back?  God has given you a way out of that abusive relationship.  Move forward.   New opportunities are on the horizon for your career.  Move forward.  You lost your house?  There’s a better one for you, but you will never know if you don’t stop dwelling on what happened and just move forward.

I remember watching Joel Osteen preach on television one day and he said something that struck a chord in me:

“See, when you drive home today, you’ve got a big windshield on the front of your car.  And you’ve got a little bitty rearview mirror.  And the reason the windshield is so large and the rearview mirror is so small is because what’s happened in your past is not near as important as what’s in your future.” Joel Osteen

So, for 2015, I have no resolutions.  What I have is a promise to myself.  I am going to move forward and look towards what God has for me.  There may be some bumps in the road, but that can’t stop me.  I have to keep moving forward.  Will you?

SPRING CLEANING?


Don't you love it when spring time comes along and everything is fresh and new?  People often do deep cleaning and organization of their homes when the season comes.  My mother is a little different.  Spring cleaning would occur in December.  She always says, "You don't start the new year with dirt and a mess!"  So, every year, we would deep clean the house, rearrange furniture and get rid of things we didn't need and donate it to charity.   It was a tradition.  A few years ago I decided to take my childhood tradition and take it to another level: spiritual house cleaning.  As we say goodbye to one year and enter in to another, let's make an effort to go it with a fresh start and a clean house.    

Imagine this…
It is garbage day and you forgot to take the trash out to the curb.  Because of your busy schedule, you haven’t been able to put the trash out for quite some time and now you hear on the news that the sanitation department is on strike.  You panic because you already have a lot of trash built up and you have no idea when the next pick up will be.  Two things happen:

1.    Your home smells foul and is dirty because of all of the trash 
2.    You have no room in the house for the new furniture being delivered because the house is a mess

Of course, this example is a little extreme (hoping no one can relate to this) but it helps to explain the purpose of spiritual cleaning.  Many of us go through our busy lives fitting God in when we have time instead of making time for God.  As time goes by, we are busier and more detached spiritually.  We become used to the filth around us and become more exposed to the enemy’s tactics.  The results, similar to my example above, are two-fold:

1.    We become irritated and irritating. Our relationships suffer because instead of the sweet aromatic personality, we give off a stench of bitter garbage.
2.    Our spiritual house is so cluttered with junk, we have no room for the blessings God has for us.   Often times we can’t even recognize a blessing when it is coming our way because our focus is on the wrong thing.

We can polish our silver and organize our pantry but the spiritual cleaning goes deeper.  Sometimes we have things in our homes that leave us open to spiritual attacks.  Here is a list of few things that you would want to get rid of during your cleaning:

  •  Ouija board and other items associated with witchcraft (even if you think it’s just for fun)
  •  Things associated with past sins (there is no reason to keep the bong as a souvenir)
  •  Art with demonic influence, such as, skulls, snakes death, etc. 
  •  Mementos from past inappropriate relationships (that bracelet from the person you were having an affair with has to go)
  • Pornography

If you have any of these items on my sample list, now is the time to part ways with them.  If you want to go in to the new year prepared for what God has planned for you, it starts with a spiritually clean house.  Once you have gone through and thrown away what doesn't belong, that's when the prayer begins.  Pray for forgiveness.  Pray for a spiritually clean home.  Pray that whatever spirits that were attached to those things are gone from your home and God's protection prevails.

The bible says in Hosea:

My people are destroyed for lack of knowledge. Hosea 4:6 (ESV)

Now that you have some knowledge, what will you do with it?  In my last post for 2014, I encourage you to start the new year off with less junk, clutter and filth, physically and spiritually.

LET IT GO


It seems everywhere I go these days, I hear the song from Disney's Frozen, Let It Go.  I was at the diner the other morning and it was playing and the song stuck in my head for the rest of the day.  "Let it go.  Let it gooo"
There's a part in the song where it says, "I'm never going back.  The past is in the past."  After singing it for the 20th time, I started thinking about the past, specifically, 2014. 

This year has been a challenging one for me to say the least.  I would be lying if I said that I didn't pick up an offense or two along the way and held a couple of grudges by the time the spring flowers in were in bloom.  But what good did that do me?  Thankfully, I didn't let it consume me for too long, because when I think of all the time I wasted being bitter, it was just time wasted.  

One of my favorite quotes is “Unforgiveness is like drinking poison and expecting the other person to die”.  This is crazy but it’s so true!  While you are going through all of the bitterness and anger, the other person feels nothing.  They could care less.  Why not just forgive them and move on?  Why not just let it go?

It sounds like a simple task.  There have been many books written about it and just as many sermons preached on it.  So, why is it that we find it so hard to do?  It’s almost like a bad habit.  Let’s take smoking as an example.  If you want to stop smoking, the trick is that there is no trick.  You have to just make the decision to stop.   It is the same thing with unforgiveness.   You have to make the decision to forgive the person who wronged you and go on with your life.  When you don’t forgive, you are the one that is missing out on life.  You are the one that is being hurt.  You are the one that is drinking the poison.

As we go in to 2015 and I am looking towards a brand new year with new opportunities, I am excited by what is to come.  I am thinking about today and anticipating what God has for me for the future.   Life is short.  Spending time thinking about the past and griping over how people have done you wrong is time you will never get back. 

One thing that I never claim to be is perfect.  I have to remind myself, why do I look for perfection in others?  We are only human.  We are bound to hurt each other eventually.   Though sometimes the blows seem to come one after another like the final round in a match with Ali, we have to remember that there is grace.  As we are shown grace, we have to extend grace.  I refuse to be shackled because of unforgiveness.   I refuse to let unforgiveness manifest itself in me, making me a bitter and angry person without a light. 

Take Paul’s advice to the people in Ephesus:

31 Let all bitterness and wrath and anger and clamor and slander be put away from you, along with all malice.  32Be kind to one another, tenderhearted, forgiving one another as God in Christ forgave you. (Ephesians 4:31-32 ESV)

So as you are saying good bye to 2014 and you’re looking at the year in review, don’t reflect on the hurts.  Forgive.  Start 2015 with a clean slate and a clean heart and truly let it go.

Oh Christmas Tree....



One of my favorite Christmas traditions is watching A Charlie Brown Christmas.  Creator Charles M. Schultz did a beautiful job in this television special reminding viewers the true meaning of Christmas.  My favorite part is when a discouraged Charlie Brown runs off after unsuccessfully decorating his tree and his friends step in and make it beautiful.   When Charlie returns to his tree, he is overwhelmed by what his friends have done and they start singing Christmas carols.  I love it! 
That scene gave me a great idea.  Every year our family decorates our tree as well as décor around the house and I have to admit, it is a gruesome chore.  This year, to maintain the Christmas spirit and peace and joy, I’ve decided to have a tree trimming party.  Family and close friends are on my guest list to help me decorate the tree while enjoying appetizers, eggnog and holiday tunes.    I’m excited!  I have never had a tree trimming party let alone a Christmas party.  So, for this month’s food blog post, I want to share a couple of appetizers I plan to serve at the gathering, one sweet and the other savory:  Key Lime Pie dip and Hot Crab Dip.  They are tasty, filling and festive!

Key Lime Pie Dip
Ingredients:
2/3 cup sweetened condensed milk
4 ounces cream cheese, softened
¼ fresh lime juice
½ cup heavy cream
3tbsp confectioner’s sugar

   1.   In a small bowl, beat together milk and cream cheese on medium speed until smooth.  Add juice and combine.
   2.   In another bowl. Beat together cream and sugar on medium speed to firm peaks.  Fold in to cream cheese mixture.  Serve immediately or chill and serve cold.



Hot Crab Dip (Paula Dean’s recipe)
Ingredients:
1 lbs jumbo lump crabmeat (no shells)
1 cup grated pepper jack cheese
¾ cup mayonnaise
¼ cup Parmesan cheese
¼ cup green onions minced (optional)
5-6 roasted garlic cloves or 2 cloves minced
3tbsp Worcestershire sauce
2 tbsp fresh lemon or lime juice
1 tsp hot pepper sauce
½ tsp dry mustard
Salt and pepper

   1.   Preheat oven to 350 degrees F
   2.   Combine all of the ingredients in a casserole and gently stir until thoroughly mixed. 
   3.   Bake for 40 minutes.  Serve hot with crackers or toast points.
